Grilled Mediterranean Chicken Pizza
Today we're heading to the Mediterranean with this grilled chicken, feta, and olive pizza from yours truly and sponsored by Omaha Steaks.
GRILLED MEDITERRANEAN CHICKEN PIZZA
Ingredients
3 cups flour
1 cup warm water
¼ ounce package dry active yeast
1 tsp. sugar
2 tsp. Kosher salt
1 tbsp. olive oil
Flour for dusting
14.5 oz. can diced tomatoes, drained of excess water and pureed
8 oz. shredded mozzarella cheese
12 oz. Omaha Steaks Mediterranean Chicken Breasts, diced
¼ cup crumbled feta cheese
½ cup Kalamata olives, seeded and sliced in half
Additional Tools:
Stand mixer with dough hook
Pizza peel
Pizza stone
Instructions:
Combine sugar, warm water and yeast in the bowl of a stand mixture fitted with a dough hook and let it stand for 5-10 minutes until foam starts to form on the top.
Add 1 cup of flour, salt and olive oil and turn the mixer on low. Continue to add flour until the dough forms into ball. Remove the dough from the mixer and place in a large greased bowl. Cover with a moist towel and allow the dough to sit for approximately 1 hour until it doubles in size.
Prepare grill for high heat cooking, placing the pizza stone on the main grill grate as it starts to warm up.
Place the dough on a lightly dusted surface and begin to roll it out in to a 12-14 inch circle. Lightly flour a pizza peel and slide it under the dough. Top the dough with the pureed tomatoes. Add mozzarella cheese, diced chicken, feta cheese and olives.
Slide the pizza onto the pizza stone, cover the grill, and allow the pizza to cook for approximately 10 minutes until the crust is nicely browned and the cheese has begun to bubble. Remove, slice and serve.
