Grilled Chicken and Waffle Biscuits with White Sausage Gravy
Since moving back to the South, I've rediscovered the magic of two food duos -- chicken and waffles and biscuits and Country (white) sausage gravy. And while these are great on their own, they're even better together as in today's recipe for Grilled chicken and waffle biscuits with white sausage gravy! I also added a bit of arugula for an additional peppery bite.
Ingredients
4 boneless, skinless chicken breasts
1/4 cup Kosher salt
1/4 cup brown sugar
4 cups water
1 (16.3 oz) can large refrigerated biscuits such as Pillsbury Grands
1 lb. tube ground sausage such as Jimmy Dean Premium Regular Pork Sausage
2 tbsp. unsalted butter
2 tbsp. flour
1 cup milk
1/4 tsp. cracked black pepper
2 cups arugula, washed and patted dry
Kosher salt and ground black pepper

Instructions
Combine 1/4 cup Kosher salt, 1/4 cup brown sugar, and 4 cups water in a large covered dish. Stir to combine. Once the salt has completely dissolved, add the chicken, cover, and refrigerate for 4 hours.
Prepare grill for medium-high heat cooking (approximately 400 degrees). Remove chicken from the brine, rinse, and pat dry. Season both side of the chicken with Kosher salt and ground black pepper.
Preheat a waffle iron. Cook canned biscuits one at a time until golden brown and cooked through. Set aside until ready to eat.
Grill chicken until it reaches an internal temperature of 165 degrees (cooking time will vary depending on the thickness of the chicken breasts but figure 6-8 minutes per side). Remove and allow the chicken to rest as you prepare the white gravy.
Place a small saucepan on the grill and add the ground sausage. Cook until completely browned, stirring frequently to break up the sausage. Remove the sausage with a slotted spoon, reserving the fat in the pan. Add butter and flour and whisk until a thick paste forms. Stir in the milk and cracked black pepper and continue to whisk until the mixture thickens. Add sausage back into the gravy and season with salt to taste.
Assemble the sandwiches by placing 4 of the waffle biscuits on four plates. Top each one with 1/4 cup arugula, 1 grilled chicken breast, sausage gravy, and another waffle biscuit. Serve immediately.
