Grillocracy's celebration of National Burger Month continues today with a Asian twist on this all American classic. The grilled kimchi burger was perfected by David Peck of Box of Chacos, an Asian and Latin infused food truck that's been heating up the streets of South Florida.
GRILLED KIMCHI BURGER
Ingredients
8 oz seasoned beef patty (see recipe below)
¼” thick slice of fry cheese (Queso Frier)
Generous portion of garlic chili Mayo (see recipe below)
Fresh kimchi, to taste
Soft bun or bread like Kaiser roll, brioche, Texas toast, lightly toasted
Small amount of olive oil
Instructions
Grill burger patty over charcoal or hardwood until desired temp-usually 5-10 minutes per side.
Meanwhile fry cheese in a little bit of olive oil in a saute pan on both sides until crispy.
Build burger with bottom bun, fried cheese, burger patty, mayo an kimchi, to taste. Kimchi is very flavorful so a little can go a long way.
SEASONED PATTY
Ingredients
7 oz black Angus ground chuck
2 tbsp Cotija cheese
1 tbsp chili garlic paste
Salt to taste
Instructions
Mix all ingredients thoroughly and cook a small piece to test for seasoning. Add salt as needed. Refrigerate until needed.
CHILI GARLIC MAYO
Ingredients
2 cloves garlic, finely minced
2 tbsp chili garlic paste
2 limes, juiced
1 cup mayo (preferably milder flavored)
Salt to taste
Instructions
Mix all ingredients and season to taste. Refrigerate until needed.
