Looking for the perfect grilled dessert to round out your July 4th cookout? Today Grillocracy's got a patriotic red, white, and blue grilled poundcake that is not only simple to make, it tastes great too! Note that this recipe can be prepared in advance of your cookout then assembled when ready to serve.
GRILLED RED, WHITE AND BLUE POUNDCAKE
(Serves 8)
Ingredients
1 lb. strawberries. stemmed and halved
1 pint blueberries
1 tbsp. sugar
2 store bought pound cakes cut into 1-inch slices
Non-stick canola cooking spray
1 can whipped cream
Additional Tools
Metal or bamboo skewers
Instructions
Prepare grill for medium-high cooking, approximately 400 degrees. Skewer strawberry halves with the cut side facing down. Place skewers on the grill and cook for 4-5 minutes until lightly charred. Remove strawberry halves from skewers and cut into thirds. Place into a medium mixing bowl along with the blueberries. Add the sugar and stir to coat the fruit. Refrigerate until ready to use.
Spray both sides of the poundcake slices with canola oil. Place on the grill and cook for 4-5 minutes per side until lightly browned.
Remove poundcake from the grill and either refrigerate until ready to serve. To plate, top grilled poundcake slices with berries and whipped cream.
