It is rare that we have leftover pulled pork (you can find a smoked pork butt recipe here) at our house but when we do I love these twice baked pulled pork potatoes. Cooked on the grill until tender then hollowed out and stuffed with mashed potato, cheese, and pulled pork, these beauties are perfect any night of the week!
TWICE GRILLED PULLED PORK POTATOES
Ingredients
4 large baking potatoes
2 tbsp. olive oil
1 tbsp. Kosher salt
1/2 cup grated cheddar cheese
2 tbsp. butter
2 cups pulled pork
1/4 cup of your favorite BBQ sauce
Instructions
Prepare grill for medium-high heat cooking, approximately 400 degrees. Coat potatoes with olive oil then season with Kosher salt. Pierce potatoes all over with a fork then wrap potatoes in a double layer of foil and place on the grill.
Cover the grill and allow the potatoes to cook for approximately 1 hour until tender. Remove potatoes from the grill and carefully remove the foil.
Using a sharp paring knife, remove the top 1/4 of the potatoes then gently scoop out the interior into a medium mixing bowl, leaving a 1/4 inch of the potato intact around the edges and bottom to create a boat.
Add the grated cheese and butter to the mixing bowl along with the potato centers. Mash well with a fork until smooth and well blended.
Gently pack 1/2 cup of pulled pork into the hollowed out potatoes then drizzle with barbecue sauce.
Top with the mashed potato and cheese mixture then return the potatoes to the grill.
Cover the grill and allow the stuffed potatoes to cook until heated through and lightly browned on the top, approximately 15 minutes. Remove and serve immediately.
