I love cooking pizza on the grill but working with fresh dough can be a bit of a challenge to folks who don't regularly make pizzas. Here to help you get in on the grilled pizza game is the team from GrillGrates, the raised rail grilling surface that has been one of my "must have" grilling tools since I was first introduced to them several years back. Prepared on a set of GrillGrates, this pizza pairs two ingredients that were meant to go together -- figs and prosciutto -- to create an appetizer or main course that everyone will love!
FIG AND PROSCIUTTO PIZZA WITH ARUGULA
Ingredients
1 Mama Mary’s Pizza Crust (or similar prepared crust), thin and crispy
1/3 cup fig preserves
1/2 cup cubed prosciutto
1/2 cup shredded mozzarella
1/4 cup shaved parmesan
1 cup arugula
1/2 cup sliced fresh figs
1 tablespoon balsamic vinaigrette
Instructions
Preheat your grill to 400F.
Lightly spray the bottom of the pizza crust with pan spray and place on a
pan or pizza pie.
Spread fig preserves evenly on pizza crust.
Sprinkle prosciutto and mozzarella evenly over the fig preserves.
Transfer the pizza to your preheated grill and GrillGrates, close the lid
of the grill.
After 3 minutes use your Grate Tool to turn the pizza 45 degrees and close
lid again, be sure to have a look at the underside of the crust - if the
grill marks are too dark you may need to lower the temperature of your
grill a bit.
After an additional 3 minutes take a peek at your pizza again. You don’t
need to cook this pizza too long, just until the cheese melts.
Once your cheese is melted remove the pizza to your pan or pizza pie.
Cut the pizza into 6 or 8 slices.
In a mixing bowl combine the arugula, fresh figs, shaved Parmesan and
balsamic vinaigrette.
Top your pizza with the arugula salad and serve right away.
You can substitute any good quality salty ham for the prosciutto or omit
altogether. You may also substitute mixed greens for the arugula.
