Wet grilling pastes are a wonderful way to introduce rich flavor to grilled meats and this chili and lime version is no different. Give it a shot on anything you want to give a dose of Mexican flavor to whether is short ribs, skirt steak, flank steak, or chicken.
CHILE-LIME WET RUB
Ingredients
2 tbsp. Kosher salt
1 tbsp. lime zest, finely chopped
1 tbsp. chili powder
½ tbsp. smoked paprika
1 tsp. dried cilantro
½ tsp. onion powder
½ tsp. garlic powder
3 tbsp. olive oil
Instructions
Combine ingredients in a small mixing bowl and stir to combine. Refrigerate the grilling paste until ready to use.
