Today at Grillocracy, John Delpha of Rosebud American Kitchen & Bar and former member of the iQue world champion competition barbecue team offers up his recipe for kicked up grilled cauliflower, the perfect side dish for whatever you're serving up!
GRILLED CAULIFLOWER WITH SWEET CHILI BUFFALO SAUCE
Ingredients for Cauliflower
1 Pound celery root, cleaned, cooked in water and puréed
1 Head of cauliflower
1/4 Cup blue cheese
1 Rib of shaved celery
Instructions
Cut cauliflower into florets. Blanch in boiling salted water for 3 minutes and then strain. Toss cauliflower with 1/8 cup canola oil until lightly coated. Place on medium/hot grill. Grill until you get light char marks. Toss in a bowl with the sweet chili sauce. Layer plate with celery root and top with cauliflower. Garnish with shaved celery and blue cheese.
Ingredients for Sweet Chili Buffalo Sauce
1 Bottle Mae Ploy
1/2 Cup lemon juice
2/3 Cup soy sauce
1/8 Cup red wine vinegar
1 1/2 Teaspoon garlic powder
1 1/2 Teaspoon onion powder
1/8 Cup sriracha
1 Tablespoon chili paste
1/2 Tablespoon maggi
Instructions
Strain the chili and garlic out of the Mae Ploy sauce. Then combine all the ingredients.
