SOUTHERN PIMENTO CHEESE BURGER
Ingredients
1.5 lbs. ground beef, preferably an 80/20 meat-to-fat ratio
Kosher salt and ground black pepper
2 cups grated sharp cheddar cheese
1/3 cup mayonnaise
2 tbsp. jarred pimentos
1 jalapeno, stem removed and minced
1/2 tsp. smoked paprika
1/2 tsp. onion powder
1/2 tsp. garlic powder
4 hamburger buns, lightly toasted
Instructions
Prepare grill for high heat cooking.
As the grill comes to temperature, combine mayonnaise, grated cheddar, pimentos, minced jalapeno, paprika, onion powder, and garlic powder in a medium bowl and blend well. Refrigerate pimento cheese until ready to use.
Form ground beef into 4 patties. Season liberally on both sides with Kosher salt and ground black pepper. Place patties on the grill and cook for approximately 4-5 minutes per side until they reach an internal temperature of 140 degrees for medium. Remove the burger patties from the grill. Assemble burgers by placing one patty on each bottom bun, add pimento cheese, then add the tops of the buns.
Serve immediately.
