It's peak season for sweet potatoes and while the traditional dish during the holiday season features them mashed then topped with mini marshmallows, they also make the perfect side dish for so many meals when sliced, seasoned and grilled as in this recipe from All Fired Up from Troy Black and the team at Southern Living magazine.
GRILLED SWEET POTATO PLANKS
Makes: 6 servings Hands-On Time: 20 min. Total Time: 20 min.
Ingredients
1⁄3 cup olive oil
1 Tbsp. minced shallot
1 Tbsp. chopped fresh rosemary
1 tsp. kosher salt
1 tsp. coarsely ground pepper
3 large sweet potatoes, peeled and cut into 1⁄4-inch-thick slices
1⁄2 cup crumbled blue cheese
Instructions
1. Preheat grill to 350° to 400° (medium-high) heat. Stir together first 5 ingredients in a small bowl. Brush olive oil mixture over sweet potato slices.
2. Grill, covered with grill lid, 3 to 4 minutes on each side or until tender. Place potatoes on a serving platter; sprinkle with blue cheese.
