While not your traditional pesto recipe, the mint in this version provides a great pop to grilled chicken, pork and pretty much everything!
MINT PESTO RECIPE
Ingredients
½ cup mint leaves
½ cup parsley
2 tbsp. grated Parmesan
2 tbsp. pine nuts, toasted
2 garlic cloves, minced
½ tbsp. lemon juice
½ cup extra virgin olive oil
Instructions
Combine all ingredients in a blender and blend until smooth. Refrigerate until ready to use.
