Ready for a little pork on pork action? Today we're preparing what will arguably be the best pork chop you have ever had, courtesy of its thick bacon-y crust!
GRILLED BACON CRUSTED PORK CHOPS
Ingredients
8 slices bacon (note: I used Smithfield Hometown Original Bacon)
2 boneless pork chops, approximately 1.5 inches thick (note: I used a Smithfield Boneless Loin, cut it into individual chops to my desired thickness, then froze the unused chops for later use)
1/4 cup mayonnaise (note: the mayonnaise acts as a binding agent for the bacon crust while also adding extra moisture as the chops grill)
2 tbsp. of your favorite BBQ dry rub seasoning
Instructions
Prepare grill for medium-high heat cooking, approximately 375 degrees. Place bacon slices on the grill and cover the grill. Allow bacon to cook for approximately 10-12 minutes until partially cooked but still soft. Remove bacon from the grill and finely chop. Rub the pork chops with mayonnaise then dust with BBQ dry rub. Place chopped bacon in a shallow dish and coat all sides of the pork chops with the bacon, pressing it with your palms so that it sticks well.
Set the bacon crusted pork chops on the grill, cover, and allow them to cook for approximately 20 minutes until the bacon is nicely browned and the chops have reached an internal temperature of 145 degrees. Remove the chops from the grill then serve immediately.
